This recipe was an absolute favorite of mine back in my pageant and modeling days because I felt like I got to have a naughty breakfast but everything was really lean and healthy for me.
I also brought out this recipe while I was breastfeeding and pumping with my son in the early days as I wanted to a high protein healthy snack to keep me full and that I could easily take out of the fridge and eat when I needed a quick snack. I suggest doubling or tripling the recipe and freezing them for later.
I make these pancakes with oats instead of flour
PREP TIME: 5 Min. COOK TIME: 10 Minutes.
RECIPE: (Makes 4 pancakes.)
- 1 cup of rolled oats
- 1 scoop of protein powder
- 2 teaspoons of baking powder
- Sprinkle of cinnamon
- Pinch of salt
- 1 Banana
- 1/2 cup of egg whites
- A splash of milk to get the recipe to desired wet consistency.
Blend oats in a Nutrabullet until it turns to a flour consistency.
Blend all other dry ingredients, banana, and egg together. Add milk in as needed to get the batter to the desired wet consistency.
Heat a griddle on medium low heat and lightly grease with cooking spray. Pour 1/4 cup of the batter on the griddle and cook for a few minutes on each side. (Look for the bubbles to form on the top in the batter). Flip over and cook till batter is dry inside.
